Broccoli Fritters with Lemony Yogurt Sauce

Fritters. Something everyone from every walk of life can get behind.

They can be vegan, if you don’t add cheese and sub a flax egg. They can be gluten free, if you switch up the flour. They can trick small children into eating vegetables and trick adults who claim they don’t like broccoli into changing their minds. They can be a main dish, a side dish, an appetizer or a snack. You can use any veggies you have on hand and switch it up as you see fit. Fritters are delicious and versatile, there is certainly no debate there. This simple recipe will give you a reason to make fritters regularly.

Fritters were one of the first vegetarian meals I made on my own. I was looking for a replacement for meat in the typical American Meal Equation: a meat + a vegetable + a carb. Since I did not want to eat 1/3 of that equation I was searching for a solution. Broccoli fritters was an easy one to just make, plop on the plate and I could still eat pretty close to the typical meal equation.

These days clearly I branch out from that equation 99% of the time, but it doesn’t mean I sometimes don’t want to eat a delicious side of mashed potatoes with a main dish.

 

This is also a super simple meal to make. If broccoli is fresh, the first step is to steam or cook as you normally would. If broccoli is frozen, just defrost. Chop up the cooked broccoli into small pieces. You’re also going to sauté up some bell pepper and onions. Mix up all the veggies with flour, cheese, eggs and spices. Just form the patties and pan fry! Thats it!

Super simple and delicious….now try tell me you don’t like broccoli.

Broccoli Fritters with Lemony Yogurt Sauce

Yield: 10-12 Fritters

These fritters are delicious as a side dish or a main course! And you may even be able to sneak some veggies into veggie-haters.

Ingredients:

Fritters
  • 3 tbsp olive oil
  • 2 cups chopped cooked broccoli (frozen or fresh)
  • 2/3 cup all purpose flour (any flour you'd like works)
  • 2 eggs
  • 1 red pepper
  • 1/2 yellow onion
  • 1/2 cup shredded cheddar cheese
  • 2 cloves garlic minced
  • paprika to taste
  • red pepper flakes to taste
  • onion powder to taste
  • small pinch thyme
Yogurt Sauce
  • 1 cup Nonfat Greek Yogurt
  • 2 tbsp Lemon juice
  • 2 tbsp Fresh Dill

Instructions:

  1. If broccoli is fresh, steam or cook as you normally would. If broccoli is frozen, defrost. Chop up the cooked broccoli into small pieces. Add to large mixing bowl.
  2. Sauté onion and bell pepper in 1 tbsp olive oil, salt and pepper. Once sautéed, add to bowl with the broccoli.
  3. Add flour, eggs and seasonings to the mixture and mix all together. Fold in shredded cheddar.
  4. Heat 2 tbsp olive oil on a pan. Wait for it to get hot enough to pan-fry. Scoop about 1/4 cup of the mixture into the hot oil, allow bottom to brown about 30 seconds before squishing the mixture down into fritters. Wait until the bottom side is browned, and flip. Allow other side to cook. Repeat with each fritter.
  5. Mix all ingredients for yogurt together, thinning with about 1/2 tbsp water if you'd like a thinner consistency. Enjoy!
