Greek Yogurt Pancakes

So… at this point this may as well be a “make stuff with greek yogurt” blog because I feel like every other recipe includes greek yogurt!

I’ve made greek yogurt bagels, greek yogurt naan (which doubles as a greek yogurt pizza dough) and now greek yogurt pancakes. I had the brilliant idea this morning. I was scrolling through instagram before getting out of bed (yes, I know I’m not supposed to do this but sometimes I do) and I passed some pancakes… but we just got back from vacation and my body has had enough with the sugary, unhealthy meals, so I was thinking of ways to make pancakes slightly healthier.

Now, I’ll let the cat out of the bag… I do not like most healthy pancake recipes, particularly the “just use an egg and a banana” pancake-imposter that has been floating around for years. That is not a pancake. That is a banana omelette. THIS. Now this is a pancake.

Full disclosure, this does include some regular ol’ all purpose flour along with some coconut flour, but I BELIEVE you could replace it with a gluten free version. I’d guess oat flour or go 100% coconut flour might be your best option, but I have not attempted with solely a GF flour – you can let me know if that works, and then these would be super healthy!

All you have to do is mix together dry ingredients, mix together wet ingredients, combine and cook like a pancake. Simple and delicious.

Greek Yogurt Pancakes

Yield: 2-3 people

A yummy alternative to the healthy egg-banana pancakes that have been floating around for a few years!

Ingredients:

  • 1/2 cup non-fat greek yogurt
  • 1/2 cup all purpose flour
  • 1/4 cup coconut flour
  • 3 tsp baking powder
  • 1 egg
  • 2 tsp vanilla extract
  • 1/2 cup almond milk
  • 1 tbsp ground flax seed
  • pinch salt
  • pinch sugar
  • non-stick cooking spray

Instructions:

  1. In a large bowl, whisk together all dry ingredients until well combined.
  2. In a small bowl, mix together greek yogurt, almond milk, egg and vanilla extract. Add wet ingredients to dry ingredients and mix gently. Make sure all ingredients are well combined but do not overmix. Some lumps are ok!
  3. Heat stove to about medium-high heat. Using either cooking spray (or butter, if you'd like something a bit more indulgent), coat the pan. Drop in your pancake. Wait until bubbles form on top and then flip, cooking the other side.
  4. Feel free to add whatever add-ins you'd like! Blueberries, bananas, chocolate chips, M&Ms, peanut butter.....the possibilities are endless. Just make sure to top with lots and lots of maple syrup!
