Jackfruit Pulled "Pork" Sandwiches

YES. It’s here! Vegetarians rejoice!

Your sadness can dissipate and your fear over what could replace your beloved BBQ is over! Jackfruit pulled “pork” sandwiches to the rescue.

I do not claim to have discovered jackfruit pulled pork, nor do I even really consider this a recipe, as much as an idea. I didn’t make my own BBQ sauce and this took all of 20 minutes, but I loved every bite. I do hope to give this delicious creation attention though because, yeah, its that good. Especially with a really good bbq sauce and some delicious slaw… ok now I’m sad there are no leftovers.

The hardest part of this whole thing is preparing the canned jackfruit, and even that is fairly easy! I’m going to walk you through it… just look at the pictures as a guide!

Alright so now our jackfruit is ready and thats by far the hardest part. Dice your onions. Add olive oil to a pan on medium heat and then add diced onions. Let cook about 2 minutes and then add the jackfruit pieces. Season the jackfruit at this stage pre-BBQ sauce. You could skip this, but my logic is that pork has its own flavor, so to replicate this to the best of our ability, there should be some dry seasonings. Once this has cooked a few minutes, add sauce. Let simmer and absorb.

SO… first things first is to make sure you buy jackfruit in brine, not syrup otherwise it will be weirdly sweet like fruit, not like the sweet-savory bbq dish we’re looking for. Drain and rinse the jackfruit. Now its time to cut. Take the knife and cut off the hard core piece, leaving only the soft pull apart pieces. Run your fingers through what’s left to separate the pieces and to pull out and discard any seeds that may still be in the jackfruit. If this makes no sense, just look up a youtube video!! There are tons.

This goes on a bun with the slaw and some pickles and that’s all she wrote. You can definitely also add traditional BBQ sides. I think my mac and cheese recipe would be AMAZING with this. I’d make extra because people will definitely want seconds!

The good news is, with vegan mayo in your slaw, this is also vegan. Everyone can get in on the fun!

Jackfruit Pulled "Pork" Sandwiches

Yield: 4 sandwiches

Ingredients:

  • 2 20 oz cans Jackfruit in brine (NOT in syrup)
  • 3/4 cup BBQ sauce of choice (or a homemade one)
  • 4 Ciabatta rolls
  • 2 large Pickles
  • 1 bag Pre-cut cabbage mix
  • 1/2 yellow onion
  • 2 tbsp Mayo (vegan, if you're vegan)
  • 1 tbsp Lemon juice
  • Salt to taste
  • Pepper to taste
  • Seasoned salt to taste
  • Paprika to taste
  • Cayenne to taste (optional)
  • 1 tbsp Olive oil

Instructions:

  1. Drain, rinse, cut and pull apart jackfruit from can. If you don't know how to cut a jackfruit, look at my above post! I do go into a bit of detail.
  2. Add olive oil to a pan to heat on medium. Add onions and then jackfruit and all the seasonings. Although BBQ sauce is going on this, I still like to season, because pork is flavorful on its own!
  3. After the jackfruit is cooked, add BBQ sauce and turn up the heat to medium high. Allow some of the sauce to cook into the jackfruit and some to evaporate.
  4. While this is cooking, make your slaw and cut your pickles. The slaw contains the cabbage mix, mayo, lime juice and salt to taste. Super simple!
  5. Once jackfruit is cooked, cut rolls and assemble! Bottom bun, pickles, jackfruit mix, slaw, top bun....eat! Serve with extra pickles or whatever side you want.... my mac and cheese paired here would be drool worthy...
