Quick and Easy Homemade Belgian Waffles

There are pancake people and waffle people and I definitely consider myself the latter.

First, i’ll just say that I am not a sweet breakfast person at all, normally. I wake up craving salt, eggs, bread, butter… anything savory and fatty, usually. BUT on occasion, something about the deep, golden brown pockets for maple syrup just really gets me going and if the waffles are homemade? Even better.

This weekend was one of those mornings to whip out the waffle maker and I’m so glad I did. As I was beginning to set up my tripod for the ol’ tiktok, I remembered that I’ve never shared this recipe!

Well, here it is. A plain, simple Belgian Waffle you’re sure to enjoy making but even SURER to enjoy eating.

This super simple waffle is sure to impress even the pancake people of the world.

Ingredients

  • 2 1/4 cups of all purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 4 tbsp sugar
  • Cinnamon, to taste
  • 2 large eggs
  • 1/2 cup canola, vegetable or other neutral tasting oil
  • 2 cups almond milk (or any milk of your choice)
  • Vanilla extract, to taste

Instructions

  1. Mix all your dry ingredients (flour, baking powder, sugar, salt and cinnamon) into a large bowl.
  2. In a medium bowl, mix your wet ingredients (eggs, oil, milk and vanilla extract).
  3. Once well combined, pour the wet ingredients into the bowl with the dry ingredients.
  4. Mix until it is combined, but do not over mix. Some lumps are ok and actually preferred.
  5. Pre-heat waffle maker and using either vegetable oil and a silicon brush or a spray-oil, lightly coat the top and bottom of the waffle maker.
  6. Pour batter into the waffle maker and cook according to the directions listed with your waffle maker.
  7. Serve with your toppings of choice. I like a pat of butter, some powdered sugar and as much maple syrup as my heart desires (a lot).
  8. Enjoy!
