15-Minute Cauliflower & Chickpea Flatbread

Sometimes, you just need an easy meal!

I love take out as much as the next guy, but that can get expensive & honestly, you spend longer waiting on the food than you’d spend just making this meal!

This meal is very simple - a pre-made and pre-cooked flatbread, some chickpeas and a head of cauliflower to roast, some avocado & a yogurt or tahini to top. Voila! A meal!

Now, of course, if you aren’t in a rush, you can make the flatbread yourself and if you’re in even more of a rush, buy the pre-cut cauliflower florets.

All you have to do is pop the pre-cooked flatbread in the oven for a few minutes while you air fry (or roast) the cauliflower & chickpeas together with some olive oil & spices of your choice — I kept it simple with some salt, paprika, cayenne, cumin, garlic powder & onion powder, but you can do whatever your heart desires!

Once the chickpeas and cauliflower are roasted and the flatbread is warm, brush the flatbread with some olive oil and salt, add smashed avocado and then your roasted cauliflower and chickpeas and top with whatever sauce you like — I did a lime yogurt sauce, but a tahini or any other sauce would also be good.

15-Minute Cauliflower & Chickpea Flatbread

Yield: 4 servings (depending on what flatbread you choose)

This 15-minute meal is as easy to eat as it is to make!

Ingredients:

  • Pre-made & Pre-cooked flatbread
  • 1 head of cauliflower or 1 bag of cauliflower florets
  • 1 can of chickpeas
  • 2-3 tbsp olive oil
  • 2 avocados
  • salt (to taste)
  • paprika (to taste)
  • cayenne (to taste)
  • cumin (to taste)
  • garlic powder (to taste)
  • onion powder (to taste)
  • 1/2 cup of yogurt or tahini for drizzling

Instructions:

  1. Chop your cauliflower (if using a head) and drain your can of chickpeas. 
  2. Add the cauliflower & chickpeas to your air fryer (or baking tray) with 2 tbsp olive oil and spices. If baking, preheat oven to 425 fahrenheit. If air frying, just add them right to the air fryer on 400. In the air fryer, they should be done in about 10-12 minutes. In the oven, they may take a few extra minutes.
  3. While you're roasting the cauliflower and chickpeas, warm your flatbread in the oven for a few minutes, as per instructions on the package.
  4. Mash 2 avocados in a bowl with just a pinch of salt.
  5. When the flatbreads come out, brush them with olive oil & add a little sprinkle of salt. Add your mashed avocado and once your cauliflower & chickpeas are done, add those on top.
  6. Drizzle with yogurt or tahini as you choose & enjoy!
