Joe's Signature Spiced Spinach Omelette
 

I’m sure I’ve said it before but breakfast might be my favorite meal of the day.

 

If all food could be breakfast food, I’d be a happy lady. Thankfully I’m marrying someone who agrees with me. Joe and I do what we call “special breakfast” on one weekend morning every week. This is where we alternate making a special meal that we love to cook (and eat). Joe usually goes with this omelette and I never complain!

He loves working with whole spices, so the fact that he found a way to do that in an omelette is no surprise to me. There have been variations on this breakfast over the years, but this is by far my favorite.

He starts by toasting his whole spices dry in a non stick pan before adding oil and the rest of the filling. He removes the filling, cooks the eggs, adds the filling back and voilà! It truly is that simple.

Joe's Signature Spiced Spinach Omelette

Yield: 1 omelette

My fiancé Joe’s signature omelette is sure to please any brunch crowd.

Ingredients

  • 1/2 tbsp whole cumin seeds
  • 1/2 tbsp whole fennel seeds
  • 4 cloves of sliced garlic
  • 1/2 small yellow onion
  • 1 cup of spinach
  • 2-3 eggs
  • 1 tbsp feta cheese
  • 1 tbsp olive oil

Instructions

  1. Dice onions, thinly slice garlic and scramble eggs.
  2. Set a medium non-stick pan to low heat. Add dry cumin and fennel seeds. Allow seeds to toast until fragrant. 
  3. Once fragrant, add 1/2 of the olive oil to the pan. 
  4. Once seeds begin to sputter slightly, add the diced onion.
  5. Once onion begins to look translucent, add garlic.
  6. Once garlic is fragrant but not yet browning, add spinach. Allow to wilt in the pan.
  7. Depending on how you like your omelette (filled or diner style), either remove toppings from heat and set aside OR spread filling out evenly in the pan.
  8. Add whats left of your oil to the pan. Add your scrambled eggs either directly over top of the fillings OR in the empty pan. 
  9. Once eggs are completely set, add back your filling to one side if you removed it and sprinkle on your feta cheese. 
  10. Fold omelette in half, sprinkle with salt & pepper and enjoy.
