Sauerkraut & Sausage Quesadillas

I can’t take credit for this idea, in any way!!

My partner Joe was watching youtube and came across this amazing recipe for sauerkraut quesadillas by the one and only J. Kenji López-Alt. He saw it, showed it to me and I yelled, dramatically to the heavens “WE NEED TO EAT ITTTTTTT.” 

Ok, it wasn’t that dramatic, but I can be pretty over the top about delicious food. So not only is the idea for this recipe not mine, I didn’t even find it, my partner did! But this was incredible. We made quite a few changes to his recipe just based on what we fancied that day. Our changes included the kind of cheese used, adding vegetarian sausage, adding caramelized onions and using pickled jalapeño instead of pickled fresnos. Though we did change a lot, I think the concept remained pretty similar and just goes to show that you can switch up anything  in recipes you don’t like or can’t find. My partner also did the sauerkraut & pickled jalapeños homemade a while back so we used those, which made this even better.

I promise you will not regret putting this into your mouth hole!! As Shia LeBeouf proclaimed — DO IT.

Sauerkraut & Sausage Quesadillas

Yield: 2 quesadillas

Inspired by J. Kenji López-Alt (but with a few twists).

Ingredients:

  • 1/2 cup sauerkraut
  • 2 Brat Beyond Sausage or other veg sausage substitutes
  • 1 cup shredded chipotle gouda or other shredded cheese of choice
  • 1/4 cup pickled jalapeños
  • 1 yellow onion
  • 4 tbsp butter
  • salt & pepper to taste

Instructions:

  1. Slice the onions thinly. Add 2 tbsp butter to a pan on low and add onions to pan. Cook until onions are caramelized. Add salt and pepper. Set aside.
  2. Slice & cook Beyond sausages or other sausage substitute in a cast iron until browned. Set aside.
  3. Place the ingredients onto one tortilla in the following order (spread out all over the tortilla.. don't miss spots!!): shredded cheese, caramelized onions, sausage, sauerkraut, pickled jalapeños, cheese. Repeat this twice.
  4. Wipe down cast iron and set it on medium low with a layer of butter.
  5. Gently place open faced tortilla face up on the pan. Add second tortilla on top. Wait until the bottom of the quesadilla is brown and slightly crisp. Flip. Repeat with the second quesadilla.
