Pumpkin Penne a la Vodka

We all know the jokes about pumpkin flavored fall items and what can I say? I’m basic. I LOVE PUMPKIN. I will shout from the rooftops and I don’t care who hears me. Pumpkin is my lifeblood. I’m not sure if the pumpkin hate goes beyond pumpkin spice, but one way or the other, I’m here to share this.

Penne a la vodka is always a go-to of mine in the cold, blustery months when I just need a little comfort food. I got an inspiration one day and decided to put 2 of my favorite fall foods together. Its comforting, its filling and most importantly, its delicious!

Pumpkin Penne a la Vodka

This delicious twist on penne a la vodka will have you questioning why it can't be fall all year long!

Ingredients

  • 1 box of penne pasta
  • 1 red or yellow onion
  • 1/2 stick of butter
  • 1 clove garlic
  • 1 tbsp tomato paste
  • 1/2 16 oz can of pure pumpkin puree (be careful not to get pumpkin pie filling)
  • 1/3 cup of vodka
  • Salt and pepper, to taste
  • Half and half or cream, to taste
  • Parmesan, to taste
  • Italian seasoning, to taste
  • Red pepper flakes, to taste
  • 2-3 cups of kale (optional)

Instructions

  1. Cook and drain penne to your preference. Set aside.
  2. While pasta is cooking, chop onions, garlic and kale (if using).
  3. Using the same pot from the pasta, add butter to melt.
  4. Add onions, garlic and tomato paste to pan with butter to simmer until onions are translucent and garlic is fragrant.
  5. Add kale (if using) to pot to soften.
  6. Add salt, pepper, italian seasoning and red pepper flakes to taste
  7. Add vodka.
  8. Add pumpkin puree.
  9. Add half and half or cream.
  10. Stir pasta back into pot and add parmesan to taste. Enjoy!
