Butternut Squash Risotto

Risotto is one of my all-time favorite foods.

I blame my grandmother and mother who are both huge fans of the dish. I have childhood memories of all 3 of us ordering risotto at restaurants and being in heaven. It is delicious and cheesy and creamy with a variety and textures and flavors and….sorry, I’m drooling.

Well, turns out, risotto isn’t as complicated as everyone says. Its really just stirring and using your taste buds! Its a bit time consuming at times but it definitely worth it. The best part is, you can add whatever you want! This one happens to have butternut squash, but your options are limitless.

All you have to do is heat some oil, add your vegetables and spices, then add your rice and add vegetable broth very slowly. The key here is making sure the broth you’ve added has absorbed before you add more. Add some butter, some parmesan and… thats literally it. Could not be simpler. An easy, one pot meal, which I know my partner always appreciates (hi, Joe! Thanks for always doing the dishes!!)

Butternut Squash Risotto

Yield: 4-6

Ingredients:

  • 1 cup arborio rice
  • 1 lb chopped butternut squash you can buy the pre-chopped kind or roast and chop a full one
  • 4 cups vegetable broth
  • 5 cloves garlic
  • 1 tbsp olive oil
  • 3 tbsp butter
  • parmesan to taste
  • salt to taste
  • pepper to taste

Instructions:

  1. Heat olive oil in a sautee pan. If you're using pre-cut squash, go ahead and add it to the oil right now with salt pepper and garlic, no pre-cooking needed. If you have a full squash, first cut the squash in half and roast at 400 Fahrenheit for 25 minutes, then chop it and add butternut squash, salt & pepper. Add garlic & sautee.
  2. Add rice to the pan and slowly (1/2 cup at a time) add vegetable broth. Wait until it is absorbed and add another 1/2 cup.
  3. Add butter and stir until combined. Add parmesan (as much or as little as you'd like)
  4. Serve and top with shredded or grated parmesan (grated is my preference) and Enjoy!
