Easy Creamy Tomato Soup

If you know me and have followed my instagram or blog for any amount of time, you probably know how much I love soup.

There is a Norwegian and Danish phrase “hygge” that has no real English equivalent but basically means cozy, if cozy were a mood. Hygge is at the core of the culture of Norway and Denmark and ever since I learned about this, I try to make my evenings super hyggelig. There is a reason why people from Norway and Denmark are some of the happiest people on the planet, and I think this is one of the them!! The reason I bring this up is that it perfectly describes how I feel about this soup.

 This soup really helps solidify all the cozy vibes I want in my evenings. It’s delicious, warming comfort food, plain and simple.

It starts with the holy grail, onions and garlic simmered in some butter and olive oil of course. In goes the spices, tomato paste, diced tomatoes and vegetable broth. Once its all simmered, immersion blend, add milk and a little parmesan, season to taste and voila! You have a creamy, dreamy tomato soup.

I served this with a scallion pancake made from the discard from my sourdough starter (this is a super cool concept!!), but it would of course be delicious with grilled cheese or garlic bread.

Easy Creamy Tomato Soup

Yield: 4 servings

A classic soup that just screams comfort.

Ingredients:

  • 1 tbsp olive oil
  • 3 tbsp salted butter
  • 2 14 oz cans fire roasted diced tomatoes
  • 1/3 cup tomato paste
  • 3 cups low sodium vegetable broth
  • 1 cup milk
  • 2 small vidalia onions
  • 6 cloves garlic
  • 1 tbsp sugar
  • salt to taste
  • 1 tbsp dried thyme
  • 2 tsp red pepper flakes
  • 1/4 cup grated parmesan plus more to top
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 1 pinch turmeric
  • 1 tsp umami mushroom seasoning (optional)
  • 1 tsp cumin

Instructions:

  1. Chop onions and garlic.
  2. Add oil and butter to a soup pot on low heat. Add chopped onions and garlic and allow to sweat until the onions are slightly translucent.
  3. Add tomato paste, diced tomatoes, vegetable broth and spices. Allow to simmer for 45 minutes.
  4. Take the soup off the heat and using an immersion blender, blend soup to smooth.
  5. Put soup back on heat, add parmesan and milk. Simmer on low another 10 minutes.
  6. Plate and serve with an extra sprinkle of parmesan on top.
